While I certainly love to create fun desserts and treats for St. Patrick’s Day, I also want balance it out with a healthy snack that the whole family will love.
What I did to create the above Shamrock visual is to clean and slice 2 cucumbers. You can choose how thin or thick the slices are based on your preference. Once fully sliced, I arranged in four sections of the plate to make the leafy shape of a Shamrock and then used cucumber slices cut in half to make the stem.
Not only is this a cute snack to have, but cucumbers offer some really great health benefits as well. Cucumbers help add a healthy green into your diet, but it is also helps to decrease the risk of obesity, diabetes, heart disease, and possibly cancer while promoting a healthy complexion, increased energy, and overall lower weight. Can’t beat that, right?
You can dip the cucumber slices in guacamole (perfect for St. Patrick’s Day!) or ranch dressing, or whatever you like to use! So many endless options!
St. Patrick's Day Cucumber Shamrock
Yield 1 plate
- 2 cucumbers
- 1 container guacamole
- 1 container ranch dressing
- Wash cucumbers thoroughly
- Cut cucumbers approx. 1/8" thickness
- Arrange cucumbers in shamrock-shape
